Someday

Last February, I took a two-day course on croissants and pastries at the local Northwest Culinary Academy of  Vancouver (http://www.nwcav.com/), thanks to a generous birthday present from my mother-in-law. I now have, if possible, even greater respect for the perfect croissant, and someday I will attempt to make pain au chocolat at home.
